Creamy Vegan Queso
This queso is one of my all time most popular recipes. It comes together quite quickly and is always a crowd pleaser at potlucks.

Creamy Vegan Queso
Ingredients
1 Cup raw cashews (soaked overnight if you don’t have a high speed blender)
½ cup nutritional yeast
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
2-3 roasted red bell peppers
3 tbsp liquid from bell pepper jar
1 to 1 ½ cup water
1 can diced tomatoes with green chiles (Rotel)
Method:
Combine cashews, nutritional yeast, salt, onion powder, garlic powder, bell peppers and liquid in a high speed blender. Add ½ to 1 cup of water and blend until smooth. Start with about a cup and add more as needed but don’t let it get too thin. Once fully blended, move to a sauce pan and heat over medium heat. Add can of tomatoes and chiles and cook until warm and creamy.
